I love cannoli, we have seen it in my favorite TV serie The Soprano's, when Tony get some for his mom, from the famous "Ferrara" Bakery in Little Italy at Grandstreet.It was absolutley the best ever...
So we want it to make at home, the first problem was to get some metal tubes for wrapping the doug,We don't have them here in the Netherlands, so i tried it with some canneloni tubes in aluminum foil, i wrapped the dough around it and put it in the stove for about 15 min. then let them cool down and remove the tubes.Now you can dip them in chocolate,and let it cool down again.
In the meanwhile you can make the ricotta cheese 250gr. mix it with 1tsp cacao 3Tbsp powdered sugar, 1tsp cinnamon and some crushed pistachio nuts. Put it in the fridge until you use it. Fill the tubes with an piping bag.
