Tonight the kids wanted to eat "Cannelloni" with spinach and ricotta cheese.That is a hard one...lot of work and in a few minutes its gone....Never mind, for the start u use a large pan,do some olive oil in it and heat up,in the meanwhile you dice some garlic and onion,put it in the pan.
For 4 persons you will need 600gr fresh spinach, do it in the pan and keep stirring, also add 1Tbsp oregano,and 1 tsp nutmeg in it.Let it cook for a few minutes,and let it cool down in a strainer.After its cold you can add 250gr ricotta and mix it.
For the sauce you need 2 cans of peeled tomato, heat it up in a pan and add 3Tbs aceto balsamico 1hand of fresh oregano,1hand fresh basil and 1 Tbsp brown sugar.cook it a few minutes,then do it in a casserole.If you don't want the vegetarian style you can add some minced meat to the sauce.Take 16 cannelloni tubes and fill them with a piping bag, and put the cannelloni on top of the sauce.
On top of the cannelloni comes the white sauce. Use 400ml creme fraise a little bit of water, pepper ,sea salt and 200gr parano cheese flakes and a little anchovy.Stir it and put it on top of the Cannelloni.
Preheat your oven for about 200 degrees,put the casserole in and let it heat up for about 25 min. Enjoy
