Pork tenderloin,plumsauce and noodles #29

After a hard day of training,it was time to made something special.Pork tenderloin with plumsauce and noodles....it was heavenly..It is a lot of work but i don't mind.First make the marinade for the pork tenderloin,it was 5Tbsp syrup,3Tbsp soy and 3Tbsp whiskey.Heat it up on the stove and stir till you have a smooth sauce, then let it cool down and put the pork in it and let it marinade for at least 2 hours.
In the meanwhile you can make the plumsauce. You will need 600gr fresh plums (sliced) 1,5cm fresh ginger sliced or grated,1 fresh Spanish pepper sliced (remove the seeds) 200gr brown sugar,a few leaves fresh mint,125ml vinegar and some clove.Put it al together on the stove and stir well,let it cook for about 45 min. and let it cool down.
Set up the grill for indirect grilling and put the pork tenderloin on the indirect side and leave it there for about 45 min. (core temp. 78 degrees)
Serve with noodles and a red wine or rose.

Paprika/pepper buns with shrimp & creamcheese #28

Tonight we made sweet paprika bun's with shrimp & creamcheese. I saw a similar recipe at the blog from Cowgirl.
I could not find the jalapenos at the local store,so i used 2 sweet paprika's and 2 spanish peppers.Cut the paprika's in 2 parts and remove the seeds,do the same for the peppers. For the stuffing we used some mint,garlic, half lemon (Juice) 200gr big shrimps,125gr creamcheese and bacon to wrap the buns.I thought it was hot,but the next time i go to the market and looking for jalapenos,they have perhaps more taste... (for the kids it was ok) we find out the next time..

Prepare the grill for indirect grilling and do the bun's on it for about 1hour and serve with rose..enjoy!

Whitsunday MOINKballs #27

It was an awesome weekend,did a family picnic,and a great BBQ with my parents in law.I thought it was nice to make MOINKballs for a tryout...it was just perfect.We made some skewers with cumin-yogurt marinade as well.(see #23)
For the MOINKballs i used a basic rub, 1Tbsp brown sugar,2tsp chili powder, 1tsp cayenne some fresh sea salt and pepper.We smoked it with mesquite wood on the "smokey joe" indirect for about 2 hours.
Use 500 gr minced meat,1 egg, breadcrum,2 cloves garlic,and a fresh pepper.Mix well and make some balls from about 4cm.
Wrap the bacon around the ball.After 1,5 hour you can glaze the balls with an chutney or jelly.

Meatloaf & abbey bread #26

Today was skateboard day, i did a little photoshoot at the local skatepark nearby with my son Rik.He want's to be like a pro as Ryan Sheckler

After the Shoot it was time to prepare the abbey bread and a meatloaf. We used 700 gr minced meat, 1 Tbsp brown sugar, 1 onion sliced ,2 parts garlic, 2 eggs ,2Tbsp bread-crum,1tsp tabasco,1fresh pepper crushed,cheddar cheese and 1 Tbsp Dijon mustard.Mix it very well and make a bread of it.Put it in foil and let it stay in the fridge for one hour,

In the meanwhile prepare the flour for the abbey bread,make 4 or 5 balls . Prepare the BBQ for indirect grilling.

Put the meatloaf on the indirect side and let it grill for about 2,5 hours (core temp.80 degrees) Do the bread for about 45 min. on the indirect side as well. the bread is done ,if you see that nothing will stay on a skewer if you put them in the bread.

Penne Limoni #25

Tonight we had some penne cooked in limoni, it give's a nice flavour on it. First you bake the diced garlic and onion in a pan,add some minced meat at it and bake it till its done,add the paprika and the fresh basil.make some tomato sauce with fresh tomato's or if you don't have time ,then use 1 can peeled tomato's and add 1Tbsp acceto balsamico stir until its done.



Quick BBQ.#24

Late from work?,don't know what to eat?We Always have some chicken in the freezer,The pesto,potato's,and zucchini (or other veggies) we had also in the kitchen.
Lit the charcoals.In the meanwhile rub the chicken with pesto,pre-cook the potato's for about 15 min. and slice them in the middle,put some onion in the middle and foil the potato.Put them in the charcoals,when done you can add some sourcream and basil on top.

Grill the chicken 7 min. each side direct.On the same time do the veggies on the grill,turn also one time,and serve with a glass of red wine.

Chicken skewers marinated in cumin yogurt #23

After a day of hard work, i saw this recipe on the site from AnotherPintPls Skewers in cumin yogurt.It looks great and the taste was awesome !!! I didn't think of a marinated chicken in "yogurt" To me it sound weird?
You have to try this for sure, the taste of 1 cup yogurt, 3Tbsp olive oil, 1 Tbsp cumin, 1Tbsp dijon mustard, 1 fresh lemon for the juice,some pepper and salt.It was perfect !!! spicy and fresh..

For the veggies we used some egg-plant and sweet potato on the grill,gratinated with some cheese.olive oil and sea salt.

Cannoli from Italy homemade #22

I love cannoli, we have seen it in my favorite TV serie The Soprano's, when Tony get some for his mom, from the famous "Ferrara" Bakery in Little Italy at Grandstreet.It was absolutley the best ever...
So we want it to make at home, the first problem was to get some metal tubes for wrapping the doug,We don't have them here in the Netherlands, so i tried it with some canneloni tubes in aluminum foil, i wrapped the dough around it and put it in the stove for about 15 min. then let them cool down and remove the tubes.Now you can dip them in chocolate,and let it cool down again.
In the meanwhile you can make the ricotta cheese 250gr. mix it with 1tsp cacao 3Tbsp powdered sugar, 1tsp cinnamon and some crushed pistachio nuts. Put it in the fridge until you use it. Fill the tubes with an piping bag.

Mothers day #21

Mothers day is always special for us, it's the birthday of our son Rik 12 years old.
Today our Family and friends came over to join us for the party,so we had to prepare 2 "Fatty's" 1 sweet with sun dried tomato's and cheddar and 1 stuffed with green pepper cheddar and the usual rub, 2Tbsp olive oil,garlic,onion, 1Tbsp 5 species chinese,and1Tbsp brown sugar.Each "Fatty" was 500 gr minced meat.Roll the fatty's and prepare the Weber for indirect grilling.
Leave the big one's for about 2,5 hours on 160 degrees.After 2 hours you can use some chutney to glaze, I used grape chutney from my Good friends.Thanx JW and Marjolijn..
For the hamburgers i used the same rub,and put the cheddar on top the last few minutes..

Cannelloni vegetarian style #20

Tonight the kids wanted to eat "Cannelloni" with spinach and ricotta cheese.That is a hard one...lot of work and in a few minutes its gone....Never mind, for the start u use a large pan,do some olive oil in it and heat up,in the meanwhile you dice some garlic and onion,put it in the pan.
For 4 persons you will need 600gr fresh spinach, do it in the pan and keep stirring, also add 1Tbsp oregano,and 1 tsp nutmeg in it.Let it cook for a few minutes,and let it cool down in a strainer.After its cold you can add 250gr ricotta and mix it.
For the sauce you need 2 cans of peeled tomato, heat it up in a pan and add 3Tbs aceto balsamico 1hand of fresh oregano,1hand fresh basil and 1 Tbsp brown sugar.cook it a few minutes,then do it in a casserole.If you don't want the vegetarian style you can add some minced meat to the sauce.Take 16 cannelloni tubes and fill them with a piping bag, and put the cannelloni on top of the sauce.
On top of the cannelloni comes the white sauce. Use 400ml creme fraise a little bit of water, pepper ,sea salt and 200gr parano cheese flakes and a little anchovy.Stir it and put it on top of the Cannelloni.
Preheat your oven for about 200 degrees,put the casserole in and let it heat up for about 25 min. Enjoy

NewYork SUBway style chicken teriyaki #19

Oh what a day, my son calls me on work to ask what he need from the supermarket for my favorite sandwich tonight!!
My favorite is the chicken teriyaki with green pepper, tomato, cheddar, and some honey mustard dressing.I ate them a lot when i was in NY...
When i came home, the dinner was almost ready, I only have to shove it in the oven for about 5 min.
Rik (and a little help from my wife) did a great job....love this sandwich.

Used ingredients: 4 chicken breast, teriyaki sauce,green pepper,tomato,basil,3 "footlong" baguette.
For the honey mustard i use 2 Tbsp mayonaise (or use yoghurt), 2Tbsp Dyon mustard and 1Tbsp honey.

Liberty Ribeye day.18#

Liberty day , Ribeye day and a mini "Fatty" on the grill with fresh green asparagus.

The ribeye was a boneless one, i prepared it with the basic rub,Brown sugar,chili powder,rosemary,salt,crushed garlic and some olive oil.
For the "fatty" you can use the same rub inside with some cheddar and green pepper.

The asparagus were wrapped in bacon.

Prepare the grill (medium full chimney starter for 47cm grill) Everything was prepared direct at 180 degrees.
Turn the "fatty" a few times.
At the same time you can put the ribeye and the asparagus on the grill.Turn the ribeye after 7 min.
After14 min. everything is ready to serve..

Limoni di amalfi cotti al forno con insalate #17

Tonight i made something Italian.The weather was rainy and cold.Nothing for the Q.
I began with half an lemon,take the pulp out (make a bun) stuffed with mozzarella,Spanish pepper,a little piece of tomato,some basil and pepper on top. Put it in a stove for about 15min. on 200 degrees.(You can also use an orange)

Serve with a ciabatta, salad and a codfish. We stuffed the codfish in some aluminum foil with some olive oil,sea salt, pepper and rosemary.(15min. in the stove)
