Tequilaburgers #135

Today I had some amazing tequila burgers.The kids love hamburgers...but those are not for kids..there is a lot of booze in it;-)
For those burgers you need 500gr minced meat,1cup ketchup,1cup brown sugar 25cl tequila,the juice of 1 lemon and a tsp tobasco and a pinch of salt.
We had some small potato's,sweet onion and pepper bells in a skillet.
Add some Mississippi sweet sauce and let it simmer for 15 minutes. (pre-cook the potato's in the microwave)

Pepper bell #134

Last week I bought a lot of pepper bells,I had some nice plans with it.
This is the first one.
Cut the pepper bells in 2,remove the seeds.
Use for 4 half's 300gr minced meat.Put the meat in a bowl.
Add 1 package taco seasoning mix in 1 cup water and stir.Then add it to the meat an mix well.
Prepare the grill for indirect grilling.
Stuff the pepper bells with cheese and the meat,add some cheese for topping.
Place them on the indirect side and leave it there for half an hour.
In the meantime place the skillet on the direct side of the grill.Chop a sweet onion in thick slices,put some jalapeno's (from a jar) in the skillet and sauté the onion.Add some sweet corn,baked beans and a cup of "Big Bob Gibson" Habanero sauce.let it simmer for a few minutes.
After 30-45 minutes the pepper bells are ready too..

Celery pasta Ribs "challenge"

Now this was a challenge!! I hate celery.The short ribs,love them, the peach are yummy too,the pasta ok....but what kind of combination...really don't know.The first time I "made" the challenge with an salad of peach and celery but wasn't satisfying me.Grilled the ribs too long with the wrong mop sauce...So I had to go back to the butcher for new ribs.
Plans changes everyday. Finally came up with this!! Actually, it amazed me what a nice exploding flavor the celery has.
I made a nice celery-peach pesto,I'm telling ya..It was absolutely fabulous.
Here's how I made it.
Use a few leaves and stumps of the celery,1cup pine nuts,1Tbs pistachio nuts,2Tbsp Grana Padano cheese,olive oil and salt & pepper to taste.(for the salt I used "the man with the pan" Jamaica flavor)
Put the whole bunch of ingredients in the food processor and add the olive oil until you have a nice mixture and set aside.
The ribs were marinated with the "butt rub" from Bad Byron's.Finaly we have an supplier in the Netherlands for those rubs,thanks to Hugo from True2BBQ
For the mop sauce we had a nice basic sauce from 1cup apple cider,1cup brown sugar,1cup ketchup,1tsp onion powder and a tsp tabasco.
I placed the ribs 2,5 hour on 120ºC indirect and smoked it with Jack Daniels wood chips.The last 30 minutes I mopped the ribs a few times.
After 2,5 hours take the ribs of the heat and let it rest.
In the meantime make a pasta (gluten free) as described on the package.
Mix a Tbsp of the celery peach pesto with the pasta and serve with the ribs and a nice glass rose.

Holliday France

We had a great holliday in France,Gorges du Verdon.
Great for canoeing, climbing,hiking and grilling.It was not allowed to make a camp fire,so we have to grill on an "electric" grill.
You can also do some nice things on it;-)
We made some things with "escalope de dinde" Anyone who says you can't make something nice on a "electric" grill.......
I stuffed the dinde with Roqueort cheese and wrapped it up,and grilled for about 10 minutes turning round and around..It was so delicious..

We've seen a lot of Aix en Provence,but the most beautiful store I've seen is the Laguiole store.
I bought a very nice sommeliers knife.

We also had a lot of fun in our rented rib with 200Hp..
Damn this boat goes fast.....
The kids had a lot of fun with an tyre behind the boat...so scary...at open sea between the big boats..

The Gorges du Verdon were absolutely fabulous.
We did some canoeing in the Gorges,very nice blue lake and river, a bit crowded but great to see.

Rainy day Hiking...we had it all on our holiday..This fire won't go out from a bit of rain..

The kids sneaked in the pool and get caught ..... you don't go in the pool when its raining...its not funny,the pool boy said;-)

As you see, we had a great time and a lot of fun, with some very good friends.
