Chicken-Mango Kebabs #152

It's been awhile, but I'm back for the last time this year.
Missed a few "challenge" things,and a lot of time to grill,but first I have to take care off my wife.
We had a terrible time,but she's in a nursing home now.The MSA goes like a roller coaster and we're still in it.
Back to the kitchen,I made some awesome chicken/mango kebobs,with a nice sauce of lemon-orange.
Use 3 boneless chicken breasts and chop them in cubes of 1''.
Marinate the cubes in a mixture of 1tsp cumin,1tsp garlic powder,1tsp chili powder,1tsp oregano,1tsp sea salt and 3Tsp olive oil.
Set aside.
For the sauce you need 1cup fresh orange juice,2 Tsp lemon juice,2Tbsp honey and 1Tbsp fresh mint leave fine chopped
Simmer on medium heat until you've got a syrup.Let it cool down.
Prepare the grill for direct heat,and grill the kebobs for about 6-10 minutes turn once.
serve with baked potato's and a salad.
Sprinkle the sauce over the meat and enjoy with a nice red wine. Chianti Classico.

Porchetta #151

It's a simple recipe... all you need is a pork belly (I had one from 1,5Kg) fresh rosemary,fresh thyme,fennel (very small chopped) sea salt and pepper.
I stuffed everything in my Jamie Oliver Flavor shaker...
The paste that came out of the shaker was spread all over the belly,and wrapped up.
We had the belly on a indirect prepared weber for about 5 hours on 110ºC
I served it with home made bread from the DO and a fresh tomato soup.
For the soup you can use 1Kg Roma tomato's quartered, 200Ml broth,1 onion (chopped),1Tbsp white sugar,a handful basil and 250Ml cream.
Bring the broth to a boil,add the tomato's,salt and onion.
Heat it up at low temperature,until the tomato's are soft.blend it wit an kitchen aid until you've got a nice thick soup..
For the flavor you can add some canned tomato puree and the cream.

Chicken stew #150

O wow, it's so much fun to cook in my brand new Dutch oven.
Today I had a nice chicken stew,so nice quick and easy.
All the ingredients goes right in the DutchOven...
you need 6 potato's sliced,3chicken breast chopped,1 large onion,2 clove's garlic,thin sliced,1zucchini sliced,2 fennels sliced,250Ml cream,125Ml chicken broth,salt & pepper to taste and 50 gr parano cheese.
Preheat the DO, 6 charcoals under the DO. Saute the onion and garlic, do the same with the chicken breast,when done add the other ingredients and stir.
Get the lid closed and put 15 charcoals on top of the lid.
Let it simmer for 30-45 minutes...DOne....

Enjoy with a Shiraz cabernet.







Sunday Hike

Finally got some time to clear my mind by taking a hike in the OostvaardersPlassen.
It is a nature reserve in our neighborhood.
Did a 3 hour walk there,in the small world,the only sound you here were from the birds.... awesome!! so peaceful.
Just take a few pics there and had a nice quick lunch for warming me up.
Next time, when the fog is gone, I hope to do some bird or deer spotting..

Dutch Oven bread #149

Well, I've got my Dutch Oven!!!
It took me a few years but finally got him...
It is a 6Quarter Wolf DO...real big... in my opinion;-)
After seasoning it was time to made some things in the DO,Lets start simple with a bread.
Make the dough according the package.
Heat up 20 briquets. place 5 under and 15 on top.
Bake the bread in 30-45 minutes.

Cauliflower challenge


It is always a "challenge" to get the right ingredients,this time it was hard to get a turkey.
The other ingredients were quite simple,cauliflower,cranberry,and wraps.
This is how I did it.

The first thing I did was the chicken.I stuffed it with lemon,garlic,parsley, and rubbed it in with "butt burners" and let it marinate overnight.
Prepare the Weber for indirect grilling, and set a chicken on a beercan (we had an rose beer) for about 90 minutes.
After grilling you can pull the chicken in small pieces and wrap it in.
The cauliflower was blanched,and finished in the oven,with an cream sauce gratin.
Put the cauliflower in a casserole.Preheat the oven on 200ºc.
In the meantime chop an onion and some garlic and sauté.Add 250Ml cream and 50gr Parmasan cheese and heat it up.
Spread it over the cauliflower,and shove in the oven for about 10 minutes.
The cranberry is a pain in the Ass... I hate them,but I give it a try...
It was not bad at all... I put 250gr cranberry's and 250gr sugar in a pan and let it cook for about 20 minutes.Now we had an little bit sweeter jelly..Not bad at all.. Specially If you eat it with the cauliflower,chicken and wrap in one bite.

Butternut squash Meatloaf #148

We had an Awesome ,quick and delicious meatloaf.Butternut squash meatloaf..
Al you need is a lazy,cold sunday afternoon,and some ingredients.500gr ground beef,1small butternut squash,1pepper bell,small onion,2 or 3 gloves garlic,1Tsp cinnamon,1egg,12 dried apricot's,bacon,pepper and salt to taste and 3 slices good white bread.
Put everything in a Kitchenaid and blend.
After the things were blended,it's time to get everything in a casserole, and shove it the oven at 190ºc.
If the meat is brown (after 30 min.),add some bacon slices on top of the meat and put back in the oven for another 30 min.
Now you have a crispy bacon top.
Serve with mashed potato or a sandwich,and a nice glass of red wine.

Paprika chicken aioli skewers #147

I saw this recipe in my email from Weber recipe of the week.
My only problem was that I can't get Tri-tip beef,so I used chicken.
For the rest I used the recipe from Jamie Purviance.
It was just a perfect easy meal to make.
Begin with 1 large zucchini and chop them in slices of 1 inch. Do the same with the chicken breast (slice of 1 inch).
Marinade it in 1 tsp smoked paprika powder,1tsp ground black pepper and 1tsp sea salt.Mix it with 3Tbsp olive oil,and whisk the zucchini slices and chicken in the mixture. Set aside for about 15minutes.
In the meantime heat up the Weber for direct grilling.
For the paprika aioli mayonnaise use 1 cup good mayonnaise, 3gloves garlic (minced) and 1tsp smoked paprika.
Whisk in a small bowl and set aside.
Put the skewers on the grates for about 10 minutes (turn once).
Serve with the aioli and a salad.

Halloween meringues #146

Happy Halloween...today I made us some nice "Spooky" meringues.
It's so simple and easy to make.
The only thing you need is 3 egg white's 180gr sugar and some patience.
Separate the egg white from the yolk.Whisk the egg white until its a little sticky.
Add the sugar spoon by spoon and keep beating the egg white till your arms fall off..(or use a machine)
Preheat the oven on 100º C.
Use some baking paper on a plate.
Put the egg mixture in a piping bag, and make the figures you want.
Shove it in the oven for about 90 minutes and let cool down.
For the eyes and stripes I used pure chocolate in a small piping bag.

Mini pizza #145

So cute, my youngest son,Boris want's to surprise his mother with mini pizza. She's staying in a nursery home for a few weeks.
The food there is .....well, not so good as at home;-)
Last week we bring some pulled pork sandwich,and tomorrow mini pizza.
He want to do it on is own..here is how he did it in pictures;-)

Buffel Mozzarella sandwich #144

My youngest son is really enjoying food,so then we spend some more bucks for a nice lunch.
We have an fine Italian delicacy shop in town,with fresh Mozzarella!. So I want to let him taste between the mozzarella from the grocery store and fresh.He told me,"dad this is so much better" with a big smile on his face..and enjoyed lunch.True son,this is awesome,and worth every buck.
Put a bit of basil pesto on a sandwich,place 2 slices buffel mozzarella on it an add some cucumber top.finnish it with some pepper&salt to taste and enjoy.

Halloween "challenge"


Halloween/pumpkin season is always my favorite time of the year...Ok I mean the pumpkin part..
I had so much ideas for the pumpkin that I can't wait.
We made a cake, syrup and having fun with carving the pumpkin.
But back to the "challenge". I show you what I've made of it.
The ingredients were Pumpkin,chicken,rice and apple.
The chicken was the main dish,I cooked it in broth and marinated in a mix of taco seasoning.
Then I stuffed the chicken in a pepper bell,with brown rice (first cooked of course) and added cheese and put it on a medium heated Grill until the cheese is melting.
For the apple I did not what to do with it,so I had this as a side dish with the pepper bell's
Use 4 medium size apple's , chop them in small pieces add the juice of 1 lemon and cook in a little bit of water, until it's a apple sauce.I added also 1 tsp cinnamon for a nice flavor.
The pumpkin is used for desert,a cake and a pumpkin spiced latte. (Starbucks in our country don't serve those) So I had to make it myself..It's so easy... see the syrup recipe.
For the pumkincake I used a small pumpkin chopped and blend it with the basic recipe for cake,and add 1tsp chocolate powder.

Livar pork #143

Last week I bought a Livar Pig (pork).
It is a pig wich had a good life with the monk's.
We had a Boston butt from almost 3Kg.
I cut off 2 pieces for a steak and saved the rest for pulled pork.
The steaks were marinated with a basic bbq rub.
50gr brown sugar,1Tbsp chili powder 1Tbsp garlic powder 1Tbsp onion powder 1Tbsp paprika powder 2Tbsp sea salt and 3 Tbsp black pepper (Ground)
Put the steaks on high heat for a few minutes each side and serve with a basic bbq sauce.
250Ml ketchup 30cl apple cider 1Tbsp tabasco 3Tbsp brown sugar 2Tbsp Dyon mustard 2Tbsp Syrup 1Tbsp basic bbq rub.
Heat up all the ingredients in a skillet and stir until you've got a nice dark brown sauce.
You can save the sauce in a can in the fridge.

Pumpkin spiced latte (syrup) #142

We can't get pumpkin spice here in the Netherlands,So I decide to make it myself.
If we have pumpkins,then we have also pumpkin cake.
The youngest made the cake,the oldest wrote the text on the pumpkin, and I carved it.
What else you got to do on a rainy day.
Ok lets go, its so easy,The only things you need are,3Tbsp pumpkin puree,1,5 cup water,1,5 cup sugar,1tsp ground nutmeg,1tsp ground gloves,1tsp ginger and 4 cinnamon sticks.
Heat up the water and dissolve the sugar.Whisk the other ingredients together with the sugar water and stir. Just let it under the boiling point for about 15 minutes.Get it in a bottle with a strainer.
For the pumpkin spiced latte you need: 1 shot espresso,1Tbsp syrup.
Add hot milk and serve with whipped cream on top.
